Last week, a mass poisoning was recorded in Bishkek, resulting in 24 people being affected, all of whom consumed shawarma from the fast food outlet "Daamduu." As a result, this establishment was fined and closed.
- Fast food consists of many components – meat, vegetables, greens, and sauces, which increases the chances of contamination if sanitary standards are not followed.
- Sauces and fresh greens are particularly risky, as they often do not undergo thermal processing.
- ensure proper storage of products;
- conduct sufficient thermal processing of meat and semi-finished products;
- avoid cross-contamination related to the transfer of bacteria through dirty hands, clothing, knives, and cutting boards.
Moreover, food should not be prepared openly. The food block should be isolated with glass or transparent plastic, and the transfer of finished dishes should occur through a special window.
Clients and waiters should not have unrestricted access to the food preparation area. The personal hygiene of workers and their knowledge of cooking technologies also play an important role.
To prevent food poisoning, doctors advise consumers:
- to pay attention to the overall sanitary condition of the establishment;
- to be cautious regarding suspiciously low prices and excessively large portions;
- not to purchase food in places where there is a lack of water, cleanliness, and order.
